Mads Mikkelsen reveals the moment from Hannibal showrunner Bryan Fuller that made him go ‘what the fuck’

Hannibal’s Mads Mikkelsen recalls the time he spent days learning about Hungarian food for a scene, only to have showrunner Bryan Fuller switch it to Japanese at the last minute

Mads Mikkelsen took his role as Hannibal Lecter seriously.

For each episode of Hannibal, Mikkelsen would pour over his script, making sure he had a grasp of whatever his character was talking about. However, Mikkelsen is still annoyed about a last minute curveball that showrunner Bryan Fuller sent his way.

“The biggest thing was when you spend 4 days learning your text about Hungarian food in the early 1700s, with a ton of words you’ve never heard before, and then you come in, and Bryan rewrote it to Japanese food,” Mikkelsen recalls during the Hannibal reunion panel earlier this month on the Emerald City Comic Con 2025 Main Stage powered by Xfinity. “That would be a ‘what the fuck’ moment, right? I said, ‘Why.’ He said, ‘I just like Japanese food better.’ ‘Great for you. Can you give me 5 minutes to pick this up.’ That was basically what we were dealing with.”

Mikkelsen still has fond memories of Fuller, who he believes did a great job as a showrunner. He just wants him to commit to a menu further in advance. This is why it’s so much simpler for Hannibal to eat people instead.
